Ingredients

  • 20 oz of salmon (or about 4, 5 oz filets) 
  • 1/4 teaspoon Kosher salt
  • freshly ground black pepper
  • 3 tablespoons light mayonnaise
  • Key west seasoning (or lemon pepper) 
  • Dry dill 
  • ½ cup Panko bread crumbs
  • 3 tablespoons Parmesan or Romano cheese
  • 4 cups diced red potatoes 
  • 2 tbsp olive oil
  • Salt and pepper 
  • Green Beans or Broccoli or Stir Fry Veggies (fresh or frozen) 
  • Salt, pepper, garlic powder
  • Lemon wedges 

Instructions

  • Salmon:
    • Preheat oven or air fryer to 400 F. While oven is heating, take salmon filet and place on a baking sheet. Sprinkle with salt and pepper. Spread mayo over salmon. Sprinkle with seasonings and top with Panko and cheese. Place in oven or air fryer and bake for 20- 30 minutes or until salmon flakes easily with a fork. This is Monika Vallette’s recipe and is so good! 
  • Roasted Red Potatoes:
    • Toss potatoes with oil and seasonings. Spread on a baking sheet and roast in the oven at 400 F for 15-20 minutes or until fork tender and browned on edges. 
  • Roasted or Steamed Veggies 
  • Bring a pot of water to boil. add a steamer basket and veggies and cover for 3-5 minutes. Or microwave according to package directions. Season with salt, pepper and garlic powder. Serve with lemon wedges 
  • *Could also toss in oil and roast in oven with salmon
