Ingredients
- Dressing:
- 1/2 cup lemon juice
- 1 tbsp minced garlic
- 1 tbsp Dijon mustard
- 1 tbsp honey or maple syrup
- 1/4 cup olive oil
- Salt and pepper (about 1/2 tsp each)
- Salad:
- 16 oz shaved Brussels
- 1/4 cup chopped dates
- 1/4 cup shredded manchego cheese
- 1/4 cup slivered almonds
Instructions
- Combine the first 7 ingredients (thru the salt and pepper) and shake or whisk in a bowl.
- Toss Brussels with 1/2 of salad dressing and remaining ingredients.
- Let sit 5-10 min before serving and add more dressing if desired.
