Breakfast On The Run is one of our favorite breakfasts to make because it’s so fast and filling. It is a great option when you are running late or when Monday morning came too fast. It keeps you energized and ready for a busy day and is easily customized!
Ingredients
- 4 large hard boiled eggs (or cooked fresh)
- 1 cup cherry tomatoes
- 1 small avocado
- Salt and pepper
- 2 Veggies Made Great muffins
Instructions
- Place eggs in 2 bowls or containers. Top each bowl with ½ of the tomatoes and half of the avocado. Sprinkle with salt and pepper. Microwave muffin and you are on your way out the door!
