Ingredients
- 6 fully cooked chicken sausage links (we used Aidell’s)
- 3 bell peppers, any color, seeds removed and sliced
- 1 medium onion, any color, sliced
- 1 tbsp avocado or olive oil (or spray)
- 1/2 tsp salt
- 1/2 tsp oregano
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1 cup sauerkraut
- 2.5 cups cooked rice (or cauliflower rice, roasted veggies, pasta or potatoes)
Instructions
Air Fryer Method:
- Preheat air fryer to 375–400°F.
- Toss sausage, peppers, and onions together with oil and seasonings. Add to the air fryer basket.
- Cook for 10 minutes, stirring halfway through to ensure even browning.
- In the last minute, add sauerkraut (if using) and stir to heat through.
- Enjoy served over rice, cauliflower rice, roasted veggies, pasta or potatoes.
Skillet Method:
- Heat skillet over medium-high heat. Add1 tbsp oil.
- Sear sausage slices until browned on both sides (about 3–4 minutes).
- Add peppers and onions. Cook 2 min before stirring to allow some charring, stir and cook 2-3 min more or until desired softness.
- Stir in sauerkraut during the last minute to heat.
- Enjoy served over rice, cauliflower rice, roasted veggies, pasta or potatoes.
Tips
- When chicken sausages go on sale, stock up! They freeze well and thaw quickly in warm water.
- Customize with different sausage flavors or add spinach for extra greens.
