Ingredients
- 20 oz of salmon (or about 4, 5 oz filets)
- 1/4 teaspoon Kosher salt
- freshly ground black pepper
- 3 tablespoons light mayonnaise
- Key west seasoning (or lemon pepper)
- Dry dill
- ½ cup Panko bread crumbs
- 3 tablespoons Parmesan or Romano cheese
- 4 cups diced red potatoes
- 2 tbsp olive oil
- Salt and pepper
- Green Beans or Broccoli or Stir Fry Veggies (fresh or frozen)
- Salt, pepper, garlic powder
- Lemon wedges
Instructions
- Salmon:

- Preheat oven or air fryer to 400 F. While oven is heating, take salmon filet and place on a baking sheet. Sprinkle with salt and pepper. Spread mayo over salmon. Sprinkle with seasonings and top with Panko and cheese. Place in oven or air fryer and bake for 20- 30 minutes or until salmon flakes easily with a fork. - Roasted Red Potatoes:

- Toss potatoes with oil and seasonings. Spread on a baking sheet and roast in the oven at 400 F for 15-20 minutes or until fork tender and browned on edges.
- Roasted or Steamed Veggies
- Bring a pot of water to boil. add a steamer basket and veggies and cover for 3-5 minutes. Or microwave according to package directions. Season with salt, pepper and garlic powder. Serve with lemon wedges
- *Could also toss in oil and roast in oven with salmon
